Hibachi

Gather around the Hibachi at A. J. Bistro as the Hibachi chef prepares your food fresh and to your precise specifications. Choose your own ingredients and enjoy an entertaining front row view of the chef’s art at work. At the Hibachi bar, food is cooked on an iron or steel griddle tableside with entertaining knifework from the chef.

Sushi

A.J. Bistro serves the popular maki-zushi, a rice and seaweed roll with fish and/or vegetables, and nigiri-zushi, little fingers of rice topped with wasabi and a filet of raw or cooked fish.

Is sushi raw fish?

No, actually that is called sashimi. Sushi actually refers to the rice. We know not everyone is daring enough to try raw fish. There are many types of sushi with cooked fish or with only vegetables. California rolls are popular, combining avocado, cucumber and imitation crab in the rice rolls. A Philadelphia roll contains smoked salmon, cream cheese, cucumber, and/or onion in the rice rolls.

Don’t like seaweed?

Some sushi rolls are made with an omelet or lettuce as the wrapper.

What makes the rice so shiny?

Sushi rice is prepared from Japanese short grain rice and seasoned with a mixture of warm rice vinegar, sugar, salt and water. This traditional recipe creates the beautiful and tasty sushi rolls served at A.J. Bistro.
